The name "pasta" is associated with Italian cuisine. Its difference from conventional pasta is that in the Italian version it is a mixture based on durum wheat flour and semolina, which does not boil during cooking. - Use durum wheat pasta.
- Leave some water in which the spaghetti was cooked to add to the sauce a little later. Pasta easily absorbs water. Therefore, adding all the liquid at once, you will get a somewhat overdried product.

Classic recipe

- Boil the pasta in salted water.
- Peeled garlic into small cubes. Cut the peeled onions into half rings.
- Preheat the pan. Fry peeled mushrooms in olive oil. Add onions and garlic to them. Add to the mushrooms 20 g butter.
- Slice sorrel leaves. Add to mushrooms.
- Put boiled pasta in a pan. Add goat cheese and mix.
- Put the finished product on a dish. If desired, pour oil. Garnish with sorrel.

Important! When stored, grated cheese loses flavor and dries. Therefore, rub it immediately before use.
With thyme in creamy sauce

- Boil pasta in salted water according to package directions.
- Fry the onion in oil until tender.
- Add garlic and fry for another 1 minute.
- Add the broth, herbs and spices. Salt to taste.
- Boil. Pass for 8 minutes until the amount of broth is reduced by half.
- Add cream.
- Cook without covering, 8-10 minutes - until the amount of sauce decreases.
- Drain the pasta. Stir with the sauce.
Important! When the pasta begins to cook, they must be carefully mixed with tongs so that they do not stick to each other.
With parmesan

- Boil pasta in salted water.
- Heat the cream in a pan over low heat. But do not bring to a boil.
- Remove from heat. Add the grated parmesan cheese and beat until it melts and becomes homogeneous. Taste the sauce and add salt as needed.
- Add pasta directly to the pan with the sauce. Shake gently to mix components.
- If the sauce is too thick, add 1/3 cup of the broth, in which the pasta was boiling.
- Serve hot, sprinkled with herbs.

With chicken

- Chicken fillet cut into pieces.
- Heat oil in a pan. Add chicken, sauté until golden brown, until tender.
- Add mushrooms and fry for 10 minutes. Then add the garlic and onions. Continue frying for another 2 minutes.
- Reduce heat, add cream and grated parmesan. Heat the mixture, but do not boil. Season to taste with salt, pepper, dried herbs.
- Add boiled pasta. Mix.
- Serve the dish with hot, sprinkled with parmesan and garlic bread.

With baked garlic

- Bring to a boil a large pot of water over high heat. Salt and boil the pasta in it.
- Garlic is baked for dishes at 200 °, wrapped in double foil. Pre-greased with oil, salt and pepper to taste. Cooking time is about 30 minutes.
- Baked garlic needs to be crushed or chopped.
- Transfer the paste from boiling water into a pan with oil using tongs. Pour 100 ml of decoction from pasta into a glass.
- Mix pasta with butter and garlic. Add cheese and decoction left over from pasta. Keep on fire until the cheese melts and covers the pasta.
- Garnish with ground black pepper to taste.
Important! If garlic is the main addition in the dish, then it must be mixed with olive oil and a little water to get a creamy consistency that will easily envelop pasta.
